Brian Goff 6d9e64b27b Fixes some docs issues with using single-dash arguments where they should be double

I found a bunch of issues where we have "-<opt>" instead of "--<opt>".
Also a couple of other issues, like "-notrunc", which is now "--no-trunc"
Fixes #5963

The `contrib` directory contains scripts, images, and other helpful things
which are not part of the core docker distribution. Please note that they
could be out of date, since they do not receive the same attention as the
rest of the repository.
